Frozen foods have a shelf life, but during storage the food is still capable of deteriorating. So how do you choose delicious food for your family?

1. Understand the storage period and storage temperature

How long can frozen foods be stored? Based on the expiration date printed on the product packaging, frozen meat can normally be stored for 3 months at -18ºC. This means: as long as food is continuously stored at -18ºC after leaving the factory, quality problems are unlikely to arise within 3 months.

However, if after leaving the factory, it is not possible to ensure that the storage temperature is always maintained at -18ºC or lower, then within 3 months the food may still have the ability to deteriorate, causing a decrease in quality. That is because under low temperatures, microorganisms do not have the conditions to proliferate, but the taste and flavor still slowly degenerate, fats are also gradually oxidized, and vitamins are also decomposed. Therefore, a 3-month expiration date on the packaging does not mean that the food is definitely guaranteed to be quality within 3 months.

In addition, in reality, when customers buy food, on the way home, the ambient temperature is high, although the products are not completely defrosted, they are still somewhat affected.

In addition, the ice compartments of conventional refrigerators in today’s homes can only achieve a cooling temperature of about -8ºC. Studies show that when food is stored at temperatures from -1ºC to -8ºC, many vitamins have a faster decomposition rate than when stored at temperatures from 0ºC to 4ºC. Therefore, when choosing to buy frozen food, you need to clearly see the production date and storage time. You should choose the product with the latest production date, preferably within 1 month.

2. Carefully observe the status of the product

Meat, fish, shrimp and other frozen foods when leaving the factory are of almost uniform quality, with meat fibers or pieces separated from each other. When packaged, there will be no water and no freezing or freezing phenomenon. If the product is stored under unstable temperatures, sometimes high and low over a period of time, water molecules can bond together to form ice and ice crystals, causing the food inside to stick together. together. That is when the product has begun to deteriorate. If continued preservation, some foods may appear cracks, foods containing fatty acids will ferment, causing a sour smell to appear.

Therefore, when choosing to buy frozen products, you need to carefully observe the state of the product. Frozen products that have ice cubes or are mixed with ice crystals should not be purchased. When buying, you should choose products ranked at the bottom where the temperature is more stable.
