  • Step 1: Make traditional mixed moon cake filling

First you need to turn on a low heat to roast white sesame seeds, cashews and melon seeds until golden brown. Next, cut the sausage into dice and sauté. Then grind the ginger jam, melon seeds, cashew nuts, pumpkin jam and lotus jam until smooth and cut the lime leaves and peel into small fibers.

Next, mix cooking oil and cake flour to form an oil dough mixture and mix all the remaining spices prepared in the filling section together to form a filling spice mixture.

Divide the filling and the crust and roll it into equal parts, so that the filling is equal to ½ of the crust.

Preheat the oven to 220 degrees Celsius for 10 minutes before baking. Line the baking tray with parchment paper and arrange the moon cakes one by one and then bake at 200 degrees Celsius for 7 minutes.

When the cake has finished baking for 7 minutes, take it out, brush the egg mixture on the surface of the cake and bake for 10 minutes at 180 degrees Celsius. When the time is up, take the cake out and let it cool slightly, then brush another layer of egg mixture and put it in the oven. Bake for 15 minutes at 200 degrees Celsius.
