2.1. Ingredients to make Kefir yogurt

– Kefir grains: about 1-2 teaspoons, you can buy at organic food stores. – Fresh milk: about 500ml, you can use cow’s milk, goat’s milk or unsweetened milk.

– Clean glass jar. – Thin fabric or lid (not completely sealed). – Plastic sieve and spoon, do not use metal because it can affect the kefir.

Step 1. Add kefir grains to milk:

– Pour fresh milk into a glass jar and add kefir grains.

– Make sure the kefir grains are evenly distributed in the milk.

Step 2. Fermentation:

– Cover the jar with a thin cloth or a lid that is not completely sealed so air can circulate.

– Place the jar in a cool place, away from direct sunlight.

– Incubation time is usually from 12 to 48 hours, depending on temperature and desired consistency. The ideal incubation temperature is about 20-25°C. The kefir will gradually ferment and thicken.

Step 3. Filter kefir yogurt:

– After the milk has reached the desired acidity and consistency, use a sieve to separate the kefir grains from the fermented milk.

– Kefir grains can be gently washed with cold water and reused for future batches.

Step 4. Storage and use:

– The resulting kefir yogurt can be drunk immediately or put in the refrigerator for later use. The finished product will keep for several days in the refrigerator.

– Filtered kefir grains can be reused to make the next batch of kefir. When not using immediately, you can preserve kefir grains in a little milk and store in the refrigerator.
